Quick Chicken Pasta

Ingredients
- 20 roasted garlic cloves
- 1/2 cup olive oil
- 2 pints halved cherry tomato’s
- 3/4 cup black greek olives chopped
- 1 bottle white wine
- 1 bag frozen chopped kale
- 1 tbs garlic powder
- Salt and black pepper to taste
- 1 10 oz log soft goat cheese
- 1 box Jovial brown rice thin spaghetti
- 1 rotisserie chicken
Instructions
- 1. Cook pasta al dente, drain and rinse in cold water
- 2. Place olive oil and roasted garlic in deep skillet. Crush garlic with back of wooden spoon and heat through.
- 3. Add tomatoes, olives, entire bottle of wine, garlic powder, salt and pepper. Bring to a boil.
- 4. Add frozen kale, bring to boil then let simmer covered for 10 minutes.
- 5. Add goat cheese. Stir and heat through.
- 6. Stir in pasta. Let simmer until most liquid is absorbed.
- 7. Serve with rotisserie chicken.
