Quick Chicken Pasta

Ingredients

  • 20 roasted garlic cloves
  • 1/2 cup olive oil
  • 2 pints halved cherry tomato’s
  • 3/4 cup black Greek olives chopped
  • 1 bottle white wine
  • 1 bag frozen chopped kale
  • 1 tbs garlic powder
  • Salt and black pepper to taste
  • 1 10 oz log soft goat cheese
  • 1 box Jovial brown rice thin spaghetti
  • 1 rotisserie chicken

Instructions

  • 1. Cook pasta al dente, drain and rinse in cold water
  • 2. Place olive oil and roasted garlic in deep skillet. Crush garlic with back of wooden spoon and heat through.
  • 3. Add tomatoes, olives, entire bottle of wine, garlic powder, salt and pepper. Bring to a boil.
  • 4. Add frozen kale, bring to boil then let simmer covered for 10 minutes.
  • 5. Add goat cheese. Stir and heat through.
  • 6. Stir in pasta. Let simmer until most liquid is absorbed.
  • 7. Serve with rotisserie chicken.
